The ending of April has been very busy — and it doesn’t look like life is going to slow down in May. We just celebrated my mom’s birthday, and next weekend I’ll be flying to the Big Island for a wedding, preparing for my dad’s birthday, Mother’s Day, AND my brother’s arrival from college!

Talk about a loaded weekend.

In any case, it floors me that I find time to cook at all. Two of my top posts this month were featured in my Weeknight Meals tag, a series that I look forward to writing every week. It makes cooking seem like less of a chore. Enjoy!

Tip: It’s almost summer — and that means grilling season! For an extra great dish, grill the peppers before baking them in the oven with their gooey insides. It’ll make the final dish taste less watery.

Yet another grill-friendly recipe. I’m always at a loss for easy BBQ meals for a beach picnic get-together and always default to burgers and hot dogs, so if you’re looking for something a little more fresh you need to try this recipe for grilled bruschetta chicken.

I’m also super in love with tomatoes right now — just in time for tomato season. Make this recipe outside on an open flame, or even at home in your own grill pan!

Tickets for the Bruno Mars concert were released way back in January. Hawaii went crazy for them and so did the rest of the country because two nights sold out in the blink of an eye. A surprise third night was added and that sold out just as quickly.

I’m seriously lucky to have gotten two seats. I don’t mean to be dramatic, but Bruno Mars’ Moonshine Jungle Tour concert was probably one of the best shows I’ve been to. Bruno Mars is completely worth it.

A quality entertainer and charming to boot. His show had everything — lights, fire, crowd interaction, a live band, a confetti drop finale, a phenomenal encore (in case you thought he didn’t already bring the house down with his set)…and let’s not forget his dance moves.

Let’s just say Jake and I are still having withdrawals. You can find me sitting in my living room in my $45 Bruno Mars tank top (outrageous, but somehow worth it) listening to Natalie.
